Duck Paitan
Menya Chiuming is a new brand from the long-running Taichung ramen house Lijiang (Tanuki) Ramen, billed as the city's first shop dedicated to duck paitan—rich, milky duck-bone broth. Tucked along Wenxin S. Rd. in Taichung's South District, about a four-minute drive from Daqing Station, this Japanese-style spot regularly draws a queue. Everything centers on duck broth, split into two lines: a clear consommé and a creamy paitan.
The signature duck paitan is made by boiling duck bones hard and whipping the collagen and aroma oil into a fine, silky foam. The clear version slow-simmers ultra-fresh duck broth with clams and finishes with a house scallop-salt tare for a clean, easy-drinking bowl. The duck chashu is blushing-pink and tender, garnished with a soft-yolk egg, a slice of orange, and goji berries. The menu also runs to a spicy duck paitan and a Jiro-style duck ramen, plus simple sides like stir-fried greens.
A great stop for anyone who wants to taste both the light and the rich sides of duck-broth ramen.
